Ingredients
800 grams (2lbs) Cod Fillets or Steaks (cut into 2inch
chunks)
3 Tablespoons Vegetable Oil
2 Medium Onions (chopped)
2 Cloves Garlic (crushed)
1 inch fresh Root Ginger peeled and chopped
1 400mls tin Coconut Milk
1 Teaspoon Lemon Juice
1 Tablespoon Chopped Coriander Leaves
1 Dessertspoon Hot Curry Power or Paste
2 Chillies (optional)
A few dried Curry Leaves (optional)
Method
Heat the oil in a saucepan, when hot add onions and
fry, stirring occasionally, until golden brown. Next
add the garlic, ginger and chillies, stirring frequently.
Lower the heat a little and add the curry powder or
paste. Keep stirring for about 4-5 minutes. Add the
coconut milk, and curry leaves (if used), salt to taste
and stir well.
Then add the fish chunks or steaks, lower heat a little
and simmer (covered) for 20mins until the fish is cooked.
Remove from heat and squeeze a little lemon juice over
it. Transfer to a serving dish and sprinkle with chopped
coriander.
Serve with Rice
