Fish Curry


Ingredients

400grams (1lb) Filleted Cod or White Fish of choice
2 Tablespoons Vegetable Oil
I Medium Onion, chopped
1 inch Fresh Ginger (peeled and chopped)
2 Cloves Garlic, peeled and chopped
1 Small tin Chopped Tomatoes
1 Fish Stock Cube, dissolved in half a cup of hot water
1 Dessertspoon of Curry Powder (Hot) or Curry Paste
A few Curry Leaves (optional)
A little Lemon Juice
Chopped Coriander leaves to sprinkle, just before serving

Method

Heat the oil in a saucepan. When hot fry the onion until golden, add the chopped garlic and ginger, stir frequently for 2-3 mins., add curry powder or paste, lower the heat a little and stir well for another 2 or 3 mins.

Now add the fish in 2 inch chunks and sprinkle in a good pinch of salt. Add the tin of tomatoes and curry leaves and the fish stock.

Gently stir until it starts to boil, then lower the heat, cover and simmer for about 15 mins. (A little more water may be added if necessary).

Remove from heat.

Squeeze a little lemon juice over the curry and sprinkle with chopped coriander. Serve, at once, with rice.
